Tres Leches (Milk Cake)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

Make the Cake Batter: In a bowl, sift together flour, baking powder, and salt. In another bowl, beat egg yolks with ¾ cup sugar until pale. Stir in milk and vanilla. Gradually add the flour mixture, mixing until just combined.

Whip Egg Whites: In a clean bowl, beat egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form. Gently fold the egg whites into the yolk mixture until combined.

Bake the Cake: Pour the batter into the prepared baking dish. Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cake to cool completely.

Prepare the Milk Mixture: In a bowl, combine evaporated milk, sweetened condensed milk, and whole milk. Once the cake is cool, poke holes all over the top using a fork.

Soak the Cake: Slowly pour the milk mixture over the cake, ensuring it absorbs well. Refrigerate for at least 1 hour or overnight.

Make the Whipped Topping: In a bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over the soaked cake.
