Ingredients: 6-8 cups chopped romaine lettuce or iceberg 1 (15 oz) can chickpeas, drained and rinsed 1/2 cup diced cucumber 1 cup cherry tomatoes, halved
1/4 cup thinly sliced red onion 4 oz salami, diced 1/2 cup shredded mozzarella or provolone cheese 1/4 cup sliced pepperoncini (optional)
For the Dressing: 3 tbsp red wine vinegar 1 tsp Dijon mustard 1 garlic clove, minced 1 tsp dried Italian seasoning 1/4 cup olive oil Salt and pepper to taste
Instructions: In a large bowl, combine the chopped lettuce, chickpeas, cucumber, tomatoes, onion, salami, cheese and pepperoncini (if using).
In a small bowl, whisk together the vinegar, mustard, garlic, Italian seasoning, olive oil, salt and pepper.
Pour the dressing over the salad and toss gently to coat.
Serve immediately or refrigerate until ready to serve.
