Cinnamon Apple Cake (Hanukkah Cake)

Prepare the Apples: In a large bowl, toss the sliced apples with lemon juice and 1 cup of granulated sugar. Let them sit for about 30-45 minutes to soften.

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

Mix Wet Ingredients: In the bowl with the apples, add the coconut oil, eggs, and vanilla extract. Stir until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, salt, and cloves. Gradually add the dry mixture to the apple mixture, stirring until just combined.

Make the Cinnamon Swirl: In a small bowl, mix together the remaining 1/2 cup sugar and 1 tablespoon cinnamon. Set aside.

Assemble the Cake: Pour half of the cake batter into the prepared baking dish. Sprinkle half of the cinnamon-sugar mixture over the batter. Pour the remaining batter on top and sprinkle with the remaining cinnamon-sugar mixture. Use a knife to swirl the mixture gently into the batter.

Bake: Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Glaze (optional): While the cake is baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.

Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then drizzle with the glaze if desired. Serve warm or at room temperature.
